We had such a good weekend, it just flew by!
Friday we had some good friends over and did a bit of chatting and wedding planning (one of my faves!). Saturday I got to run some errands — and by errands I mean, shopping at Michael’s with my 20% off everything coupon and clothes shopping at Kohl’s, hehe. Then we went out to Pasadena with Gare’s family to celebrate our sweet little sis’ birthday at Yard House. Oh and did I mention that Yard House was A-mazing!? Okay, well more on that later… Sunday was a day full of “getting things done” and it sure felt good! Nothing like a clean kitchen and some time well spent with the hubby!
For dinner I broke out the Foreman Grill and made some Teriyaki Salmon with Grilled Bell Peppers and some mashed potatoes. This is one of my favorite recipes that I received from Gare’s Aunt Julee so I thought I would share it with you all. Enjoy
Grilled Teriyaki Salmon
What you need:
- Salmon (best if skinless)
- Ginger (fresh or tubed)
- Teriyaki Glaze (I used Kikkoman brand)
- Brown Sugar
- Foil
- Cut the salmon into desired servings and rinse in water; pat dry with paper towel.
- Rub all sides of the Salmon with the ginger (about the size of a dime if using tubed ginger) — this will help calm the fishy flavor; set aside.
- Lay out enough pieces of foil for each pieces of salmon — be sure they will have enough space to fold shut
- Using a basting brush, brush the Teriyaki glaze out in the center of the foil, approx. the size of the salmon; sprinkle with brown sugar, lightly

- Lay the Salmon on top of the glaze/brown sugar mixture and baste the salmon with more glaze; sprinkle with brown sugar

- Fold the foil shut being sure to curl up the ends of the folds so that no juices can escape
- Grill for approximately 7-8 minutes on each side or until the Salmon “flakes” when you twist a fork on the top of the Salmon
- If using the Foreman Grill, set to 375 degrees and Cook for 4-5 minutes.
I normally serve this with rice or mashed potatoes and broccoli or bell peppers. It is a quick and easy Salmon recipe that I can guarantee that you will LOVE!
